From Gate to Plate: Korean Kalbi or Marinated Beef Short Rib

Korean Kalbi (Marinated Beef Short Rib)

Ingredients:

8 pieces of korean cut short ribs (makes 2-3 servings)
1 cup brown sugar
1 cup light soy sauce
1 cup cold water
1 Tablespoon sesame oil
3 cloves of garlic diced fine
3 green onions diced
A few slices of fruit diced (apple-pear, pineapple, apple, or pear)

Procedure:

1. Start with brown sugar in a bowl then stir in soy, water and sesame oil
2. Stir in garlic, green onions, and fruit
3. Add short ribs and ensure that all the meat is covered by the marinade for 16-24 hours (Works well to put in a Ziplock bag or deep tupperware)
4. Remove from marinade and remove any green onion, garlic, or fruit that may be attached to the short rib (discard marinade)
5. Preheat BBQ or pan to medium-high heat and grill/fry for approximately 3-5 minutes per side flipping it three time. Bone marrow should not be red at all
6. Remove from heat and let rest for a minute then use kitchen scissors to cut into one bone sections
7. Serve with short grain sticky rice, lettuce leaves, dried seaweed crisps, kimchi and miso soup
